1.Real purple yam
We use 100% yam (Dioscorea alata), grown in specific high-altitude areas in the Philippines, where lower temperatures result in 15% higher anthocyanin concentrations than lowland crops. Many suppliers sell "purple sweet potato powder" that is actually purple sweet potato (Ipomoea batatas), which is cheaper and easier to source.
2. Pre-steamed tubers and then dried
We pre-steam fresh purple yam tubers before drying - this step helps lock in the natural aroma and sweetness, breaks down starch for a smoother taste, and retains a darker natural color during processing.
3. Low-temperature dehydration
Our powder is dried at temperatures below 50°C to preserve heat-sensitive nutrients such as anthocyanins and maintain the fresh flavor of purple yam.
