Nisin, also known as milk streptococcin or nisin, is a bacteriocin produced by some strains of Lactococcus lactis subsp. lactis and was first discovered in 1928 [2]. It is a polypeptide composed of 34 amino acid residues, which are composed of uncommon amino acids such as lanthionine, β-methyllanthionine, dehydroalanine and β-methyldehydroalanine.
