Xanthan gum
Xanthan gum, also known as xanthan gum, xanthan gum, xanthan polysaccharide, is a monospore polysaccharide produced by the fermentation of Pseudomonas sp. It is mainly composed of carbohydrates by Xanthomonas spp. The raw material, through aerobic fermentation bioengineering technology, cuts off the 1,6-glycosidic bond, opens the branched chain, and then presses the 1,4-bond to synthesize an acidic extracellular heteropolysaccharide composed of a straight chain. In 1952, the cabbage black rot Xanthomonas was isolated by the U.S. Department of Agriculture's Northern Research Institute in Peoril, Illinois, and obtained by converting the cabbage extract into a water-soluble acidic exopolysaccharide. Xanthan gum is an extracellular microbial polysaccharide produced by the fermentation of sugars by Xanthomonas. Due to its special macromolecular structure and colloidal properties, it has various functions and can be used as emulsifiers, stabilizers, gel thickeners, wetting agents, film forming agents, etc., and is widely used in various fields of the national economy.
